What is Hon Mirin(本みりん)?
Hon Mirin is one of the alcoholic beverages with an alcohol content of about 14% used for seasonings and drinking in Japanese cuisine.
It’s sweet. Contains about 40-50% sugar.
Mirin-style seasoning(みりん風調味料) and Hon Mirin(本みりん) are not the same.
In order to differentiate between these products, original Mirin is sometimes called ‘Hon Mirin.’
What is Mirin-style seasoning(みりん風調味料)
Less than 1% alcohol with added sugar such as umami seasoning and starch syrup to resemble the flavor of Mirin.
◎ Since total sugar is lower in Hon Mirin than in sugar, Hon Mirin can be said to be low-carb.
◎ Mirin’s GI value (glycemic index)
The GI value is the “speed of blood sugar level that rises after eating”,
and the lower the GI value, the slower the rise in blood sugar level.
The GI value is generally high when it is 70 or more, and it is desirable to actively consume foods of 60 or less.

Compared to Hon Mirin, the GI value of sugar is clearly higher.
It is healthier to use Mirin instead of sugar for cooking.
** Mirin Syrup Recipe **
Material (amount to be about 100 ml)
Hon Mirin 200ml
* Please use “Hon Mirin” instead of Mirin-style seasoning.
1) Put Hon Mirin in a pan and heat it over high heat to bring it to a boil to remove alcohol.
2) Heat over high heat, being careful not to blow over. Boil until it becomes a little thick and half the amount.
3) Complete when it becomes light brown and thickens.
* Store in the refrigerator for about 1 week.
If it becomes white and hard during storage, it will return to its original state when warmed.
It can be used as a substitute for honey, sugar and maple syrup in various dishes and sweets.
“Mirin toast”, which uses mirin syrup instead of honey, has a cleaner sweetness than honey.
